Dried bergamot peels – Zest
Handmade and naturally dried bergamot peels; excellent to make flavored oil, liqueurs, tea and herbal teas. They can also be used to perfume, inside fabric bags, clothing and linen.
The dried bergamot peel is a special element, it can be used to create flavored oil. It is sufficient to macerate the peel (without the white mesocarp) in olive oil and let it take on its flavor for a month. The right dose is one fruit for a quarter of a liter of oil. Once the flavored oil has been created, it can be filtered and stored, preferably hermetically sealed and in the dark. This product is perfect for dressing pasta, fish, white risotto and salads.

With the peels. The dried peel of 4 bergamots can also create a delicious citrus liqueur. It is sufficient to macerate the skins in half a liter of alcohol. After a few days, a syrup is made with half a liter of water and 300 g of common sugar and this solution is mixed with the alcohol (removing the skins). This substance, filtered and left to rest for about 20 days, becomes a delicious digestive liqueur, particular and refined, very pleasant on the palate, also excellent to put in desserts.
